No worries, I've got you covered. These 3 breakfast muffins can be made ahead of time and even frozen for up to 6 months. So you can make a large batch and have some now and freeze some for later.

You may be wondering, how are these different from other muffins like those you make from a box or get at your local coffee shop? Most store-bought muffins and mixes have very little fruit, no vegetables and are mostly fruit-flavoring (a chemical added to the food to make it taste for instance, like blueberries or strawberries) sugar, refined white flour, and unhealthy fats. They have a ton of calories, but very little nutrition our bodies need every day.

When we fill up on these calorically-dense but nutritiously poor foods, we tend to overeat on the calories and leave our bodies hungry for the nutrients they still need. We often feel this by being hungry 2-3 hours after eating a calorically-dense but nutritiously poor meal or having an energy crash. So, naturally, we reach for the next sugary snack or caffeine to pick us up. It can become a vicious cycle where we are consuming way too many calories that are stored as fat but experience hunger cravings and low energy. For our kids, it can lead to a decreased ability to focus which can affect how fast and how much they can learn.

The stores are not out to get us, but they are trying to make money, which means they will use the cheapest ingredients such as white flour, processed sugar and unhealthy oils. These muffins lack the nutrients our bodies need to run at 110%; instead, they give us low energy that force us to find the next sugar or caffeine fix.

Note: If you are used to sweet muffins, cereals and pancakes, start with 1/2 cup honey or maple syrup in the recipe and over time reduce down to 1/4 cup honey or maple syrup. It takes a little time for our taste buds to adjust, but once you reduce the amount of sugary foods you eat, your taste buds will adjust and fruits, including these muffins, will start to taste even sweeter!
